Avocado and fresh herbs soup
-2 avocados
-800 ml of spring water
-2 organic vegetable stock cubes
-1 bunch of cress
-1 bunch of flat-leaf parsley
-2 leaves of kale
-Juice of 1/2 lemon
-1/2 garlic clove
-A pinch of paprika
-1 bunch of chive
-Salt flower
Peel the avocados, cut one half only into small cubes. Sprinkle with lemon juice and set aside. Add the water and the vegetable stock in your mixing bowl. Add the remaining avocados, lemon juice, herbs, peeled garlic clove, paprika and a pinch of salt flower. Blend.
Pour the mixture into soup plates and decorate with the avocado cubes and the chives finely chopped.
