Quinoa tabbouleh with radishes
Ingredients:
– 2 cups quinoa
– 2-3 young onions
– ½ bunch of mint
– ½ bunch of cilantro
-1 bunch of radish
-1 cucumber
– Fresh baby spinach or rocket
– Himalayan salt
– Lime and zest
– 8 tbsp olive oil
– 1 pinch chili pepper flakes
– 1 ripe avocado
Soak the quinoa (1vol) min 4h in 2 vol of water. Drain and rinse the quinoa and replace the same volume of remaining soaking water with pure water for cooking.
Put the quinoa in a volume of water equivalent to that recovered from the soaking water and bring to a boil, reduce the heat and cook for 5min. Turn off the heat and allow to swell 20min.
Chop young onions, radishes, cucumber, mint, cilantro. Mix lemon juice, chili pepper and olive oil. Add the salt according to taste. Cut the avocado into cubes. Mix this sauce with quinoa, avocado, herbs and young spinach.
