Sprouted buckwheat salad with cashew tzatziki sauce:
Ingredients:
-150gr of buckwheat
-1tomato
-3 young onions
-10 black olives
-1 1/2 cucumber
-1/2 bunch of mint
-the juice of half a lemon
-1 clove of garlic
-1 cup cashew soaked for 4 hours
-Fleur de sel
-3 tablespoons of olive oil
For the tatziki sauce: Mix 3/4 cucumber, cashew nuts, lemon juice, oil, fleur de sel and garlic. Once you have a smoothy sauce, add chopped mint.
Soak the buckwheat for 1 night and then rinse thoroughly. Cook the buckwheat 10 minutes in your steamer.
Finely chop tomato, remaining cucumbers, young onions and olives. Mix with buckwheat and tatziki sauce.
